5 Quick and Healthy Meals for Busy Weeknights

Busy evenings create an awkward question: what can you cook when you want something nourishing but have very little energy left?
The answer does not have to involve complicated ingredients or an hour at the stove.
These five flexible meals are designed for ordinary weekdays. Adjust ingredients according to your dietary needs, budget and what is available where you live.
Mediterranean Chicken and Grain Bowl
Cook chicken pieces in a pan with olive oil, garlic, paprika, black pepper and a small amount of salt.

Season lightly with soy sauce or another preferred seasoning, remembering that many sauces can contain substantial sodium.
Add chicken, tofu or prawns if you want additional protein.
One-Tray Roasted Vegetables and Protein
Heat the oven and line a baking tray.
Add chopped vegetables such as peppers, courgettes, onions, broccoli, carrots or sweet potato.
Add chicken, fish, tofu or chickpeas, making sure foods requiring different cooking times are handled appropriately.
Season with herbs and spices, drizzle lightly with oil and roast until everything is properly cooked.
The major advantage is minimal washing up.
Ten-Minute Yoghurt and Fruit Breakfast Bowl
Busy-day meals are not only about dinner.
Add plain yoghurt to a bowl and top it with fruit, oats, nuts or seeds and a small amount of cinnamon.
If you prefer a sweeter taste, ripe banana or berries can add natural sweetness.
It works for breakfast, a quick lunch or a substantial snack.

Healthy meals do not need to be elaborate.
WHO’s current healthy-diet guidance emphasises dietary variety and foods such as fruits, vegetables, pulses and whole grains while recommending moderation of foods high in free sugars, sodium and unhealthy fats.

Rice, pasta, beans, eggs, frozen vegetables, tomatoes, yoghurt, fruit and a few dependable seasonings can produce many combinations.
Cooking becomes easier when you stop demanding restaurant-level creativity from yourself every evening.
Some nights, dinner simply needs to be nourishing, enjoyable and achievable.
